Ingredients
Nonstick cooking spray
11 oz 1 Can mandarin oranges, plus 2 tbs syrup, reserved & drained
3 tbs Less sodium soy sauce
1 tbs Honey
1 lb Salmon fillets
1/8 tsp Salt
3/4 tsp Ground black pepper
1 Red bell pepper, sliced into rings
1/4 cup Red onion, thinly sliced
1 tsp Rosemary leaves, chopped
1/2 tsp Parsley leaves, chopped
Directions
1. Preheat oven to 375°. Spray 13 x 9-inch baking dish with cooking spray.
2. In medium bowl, whisk 1 tablespoon reserved syrup, soy sauce and honey. Place salmon skin side down, in prepared dish; sprinkle with salt and ½ teaspoon black pepper. Drizzle soy sauce mixture over salmon. Bake 15 minutes or until internal temperature of salmon reaches 145°.
